For Strawberry Puree
1/3- 1/4 lb Fresh Strawberries, washed and stemmed
2 tablespoons Granulated Sugar
1/2 tablespoon Lemon Juice
For Almond Milk Blanc Manger
1 2/3 cups Unsweetened Almond Milk
3 tablespoons Corn Starch
2 tablespoons Granulated Sugar


1. Make strawberry puree. Chop strawberries and put into a microwave-safe bowl. Stir in 2 tablespoons granulated sugar and lemon juice. Cover with plastic wrap and microwave on high for about 1 minute. Uncover, let cool then refrigerate until ready to use.
2. Make almond milk blanc manger. In a saucepan, combine corn starch, 2 tablespoons granulated sugar and almond milk. Stri well. Heat over medium low heat and simmer stirring constantly. When it starts to get thickened, turn off the heat. (10-12 minutes) Pour the mixture into each serving ramekin (or your serving cup). Let cool at room temperature for 10-15 minutes. Then refrigerate for 2-2.5 hours or until set.
3. When served, turn each blanc manger up side down on the plate, spoon the juice from the strawberry puree and spread around the blanc manger. Place strawberries on top.
