Stuffed Bell Peppers
Stuffed bell peppers with potato,pea and spices make it very tasty and yummy. A delightful dish!
Cooking Time: 30-45 minutes
Preparation Time: 20 minutes
- 4 medium-sized green peppers
- 4 medium-sized potatoes
- 2 tablespoons sweet peas
- 6 tbsp cooking oil
- 3/4 tsp cumin seeds
- 1/2 teaspoon finely grated ginger
- 1 large onion finely chopped
- 1 green chili finely chopped
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp garam masala
- 1/2 tsp raw mango powder
- about a spoon of butter each capsicum
- Salt to taste
1)Wash the Bell peppers well and pat dry with paper towel. Cut the top off about 1″ from where the stem is attached. Remove all the seeds and discard. Keep them for later use.
2)Wash the potatoes and then boil till soft. Peel, mash roughly and keep aside for later use.
3)Heat 3 tbsp of cooking oil in a pan on medium flame, till hot. Add the cumin seeds and cook till spluttering stops. Now add the green chilies and ginger and fry till the chilies turn Wheaties.
4)Add the onion and fry till soft.
5)Now add all the powdered spices and fry for 1 minute. Add the mashed potato,sweet pea and mix well to blend with all the spices. Cook for 2 minutes, stirring often. Turn off the fire, add salt to taste and mix well.
6)Fill each green pepper to the top with the mashed potato mix. Press down and top up to ensure they are well filled. Add a half a teaspoon of butter on each stuffed bell pepper.
7)Preheat the oven to 180 C. Grease a baking sheet with oil or line it with parchment paper.
