I should start writing something about my Egg curry.It was the beautiful sunday morning,just woke up from the bed and switched on my phone got one message from my friend let plan for cherry picking,its a beautiful day for cherry picking ,I said yes to her and asked my husband lets gor for cherry picking.But I am now thinking about whats the breakfast, for that purpose I boiled the egg with borosil microwavables dish with really saved my time and the day.
After few minutes we got ready and had few boiled eggs and bread.Head straight to our cherry picking excursion.The day was really beautiful we reached cherry picking farm and picked around 10lb fresh from the trees.
Came back to home by evening,Now this time I want to cook something for the dinner for that I looked at my remained boiled egggs and asked hubby If he will be ok with egg curry.Yeah I know it is one of the favourite recipe of my hubby.Let me share the recipe of the curry

4 tbsp oil
1 cup chopped onion
1/2 cup puréed tomatoes
1 1/2 tsp ginger paste
1/4 tsp garlic paste
1/2 tsp cumin seeds
1/2 tsp turmeric powder
2 tsp cumin powder
1/2 tsp Red chilli powder
1/4 tsp garam masala
Salt to taste
(1)Boil the eggs in borosil microwavables dish in a microwave after this put them into cilled water and peel them. Put a cut on each egg with a knife. Smear a bit of turmeric powder, salt and a little chilli powder on this and keep aside. Fry the chopped onion in a tsp of oil till it turns brown at the edges. Let ithis cool and grind to a smooth paste. Heat the oil.
(2)Put the 4 tbsp of oil in a wok and fry the eggs till they turn reddish orange and the skin starts crinkling. Remove and keep aside.
(3)Put the cumin seeds into the remaining oil in the wok, and add the onion paste and fry for a minute. Add the tomato purée, grated ginger, garlic paste, and a little salt and fry this masala on medium heat, till you see the oil separating from it.
(4)Now add the cumin powder, turmeric and Redchilli powders. Sprinkle a little water and keep frying the masala on low to medium heat until the raw smell of the spices disappears and the masala turns a deep red in colour. While it is cooking, if the masala seems to be drying out (it will then burn), sprinkle some more water as needed and cook.
