Ingredients

  • 1 bowl okra/bhindi, cut into rounds
  • 1 potato
  • 2 tbsp vegetable oil
  • 2 Onions,chopped
  • 1.5 tsp ginger
  • 2 dried red chili
  • 1 tsp black pepper
  • 1/2 tsp cumin seeds
  • 1/2 tsp fennel seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/2 tsp pani puri masala
  • salt, to taste

Whole spices

  • 2 cloves
  • 2 green cardamom
  • 1 cinnamon stick

Instructions

  1. Start by adding oil in a pan on medium heat.

  3. Next add chopped bhindi and potato.

  5. Heat 1 tablespoon oil in the same pan. Add cloves, green cardamom, cinnamon stick, black cardamom and peppercorns. Saute the whole spices till fragrant.Bhindi Do Pyaza 5Bhindi Do Pyaza 6
  6. Then add cumin seeds and fennel seeds,wait until sputters.
  7. Add chopped ginger and broken dried red chili.
  8. Saute till ginger starts turning golden in color.Bhindi Do Pyaza 7
  9. Add onions and mix. Also add turmeric powder and salt.
  10. Cook for 2-3 minutes or till onions turn translucent.
  11. Add the cooked bhindi and mix.Bhindi Do Pyaza 8
  12. Add garam masala, amchur and stir to combine.
  13. Lower the flame and cook with closed lid for 20-25 minutes.
  14. Serve bhindi do pyaza with roti or any bread of choice.
